These Sunday Supper Ribs need just onion, garlic, salt, and pepper to turn out pull-apart tender after a long, low bake. It's the kind of hands-off Sunday dinner that builds its own sauce as it cooks.

Ingredients
  

  • 2 ½ to 3 pounds pork back ribs or side ribs
  • 1 large onion thinly sliced
  • 6 garlic cloves sliced
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions
 

  • Heat the oven to 300°F.
  • Season the ribs generously on both sides with salt and pepper.
  • Arrange the ribs in a single layer in a 9x13-inch baking dish, roasting pan, or Dutch oven.
  • Scatter the sliced onion and garlic evenly over the ribs.
  • Cover the pan tightly with a lid or heavy-duty foil and bake for 2½ to 3 hours.
  • Turn the ribs about halfway through cooking, moving pieces from the top into the pan juices and vice versa.
  • Cook until the ribs are pull-apart tender and the meat easily releases from the bone.
  • Rest the ribs for 10 minutes before serving with the softened onions and pan juices spooned over the top.

Recipe Card Tips

  • Keep the pan tightly sealed for the entire cook time. Letting steam escape early slows the braise and can leave the ribs tougher.
  • Uncover only for the last 10 to 15 minutes if you want color on top, any earlier and the ribs dry out before they're tender.
  • Let the onions cook all the way down in the pan liquid. They turn jammy and are worth spooning over the ribs at serving, not leaving them behind in the pan.
