Vinegar Pie is a classic Southern dessert with a silky custard filling and sweet-tangy flavor, baked in a flaky crust until golden.

1 9-inch pie crust 4 large eggs 1¼ cups granulated sugar 2 tablespoons apple cider vinegar or white vinegar ¼ teaspoon salt ¼ cup unsalted butter melted and cooled 1 tablespoon all-purpose flour Optional ¼ teaspoon ground cinnamon
Preheat the oven to 350°F and line the crust with parchment paper or foil and fill with pie weights.
Place the pie shell on a sheet pan and blind bake 15 minutes. Remove weights and bake for 8 to 10 minutes more.
Whisk the eggs and sugar until fully combined and pale.
Add vinegar, salt, butter, flour, and cinnamon and whisk until smooth.
Pour the filling into the warm crust.
Bake for 30 to 35 minutes until lightly golden and the center is set.
Cool completely before slicing.
Chef Jenn’s Tips
Apple cider vinegar gives a slightly warmer flavor, while white vinegar makes it brighter and more lemony. Both work beautifully.
Do not skip blind baking. A soggy crust will ruin this pie.
If the edges brown too fast, use a silicone pie shield or foil ring.
Chilling the pie before serving makes cleaner slices.
